			<content:encoded><![CDATA[<p>So tonight, after our relaxing afternoon and walk around the neighborhood (walk total today was about 7 miles &#8211; 5 with a neighbor/friend this morning and about 2 with Brady tonight) we came home to eat dinner.  I had marinated some thin pork chops for Brady and some tofu cubes for me.</p>
<p>Our spicy/sweet marinade was a mixture of a few ideas.  One of them was from an old <a href="www.magsdirect.com">Cooking Light</a> recipe I ripped out and saved.  It involved soy sauce and maple syrup.  The rest I just came up with.</p>
<p><strong>Sweet and Spicy Marinade &#8211; aka Bring on the Baby Sauce</strong></p>
<p><strong>*</strong>I didn&#8217;t really measure I just threw things together, but I am going to estimate.  Feel free to change the measurements as you&#8217;d like!</p>
<ul>
<li>1/3 c. soy sauce (I used lite sodium)</li>
<li>1/3 c. maple syrup</li>
<li>BIG sprinkle of crushed red pepper</li>
<li>medium sprinkle of red pepper flakes</li>
<li>1 T. sesame oil</li>
<li>1 T. rice vinegar</li>
</ul>
<p>Mix together and use to marinate any meat or tofu you would like.  I also added sesame seeds!</p>
<p>We had our main dishes on top of large salads that Brady made.  The salads included:</p>
<ul>
<li>romaine</li>
<li>spinach</li>
<li>sweet peppers</li>
<li>avocado</li>
<li>tomato</li>
<li>bacon for Brady</li>
<li>cheese for Brady</li>
<li>sugar snap peas</li>
<li>hard boiled egg for Brady</li>
</ul>
<p>They were light, spicy and summery!</p>

<p>I baked my tofu at 500 for about 20 minutes.  I like it better cooked for 40 min on 450, but I was hungry and impatient!</p>

<p>For dinner I wanted something really easy because I was making my cupcakes and getting things ready for the party tomorrow!  I threw this together and loved it!  It literally took 15 min.</p>
<p><strong>Tofu Asparagas Quinoa</strong></p>

<ul>
<li>1/2 c. quinoa cooked as usual</li>
<li>1/2 block of tofu</li>
<li>bunch of fresh asparagas</li>
</ul>
<p>Cooke the tofu in a skillet until browned with:</p>
<ul>
<li>soy sauce</li>
<li>fresh garlic</li>
<li>minced ginger from TJ&#8217;s</li>
<li>salt and pepper</li>
<li>sesame oil (just a dash)</li>
<li>sesame seeds</li>
</ul>
<p>Broil asparagas with salt and pepper and a little EVOO (I used PAM) until done.</p>
<p>Mix quinoa, tofu and cut up asparagas!  Enjoy!</p>
<p>I am really loving tofu!  It tastes so fresh!<br />
