The weekend is over and it was busy but great. Now it’s back to the usual. Teaching classes, cooking, library, shopping, playing, the usual.
Part of today’s usual included some leftover quinoa turned into a new favorite recipe.
I love that quinoa is so versatile and can go with anything. From Asian to Mexican, Greek to Italian and everything in between – quinoa is the perfect base to a meal.

Back to food blogging. I can’t believe it’s already Wednesday! When you don’t get home until Monday night and then you have conferences last night until 8pm, it goes quickly. I have a night off tonight and then conferences again tomorrow night until 8pm – yuck! At least they will all be done by next week, which is only a 1 1/2 day week because I have a doctor’s appt. and we get off for Thanksgiving on Tuesday!
So…. Monday

Today was another busy day! We had a staff meeting after school and then we went to see He’s Just Not That Into You with two of my girlfriends! I highly recommend it! I want to see it again.
For dinner I had popcorn (94%ff kettle corn which I ate on the way) and then when I got home, I had a almond butter and pear sandwich. It hit the spot. Last night, I did make time for some baking.

It included:
Kashi Go Lean wheat berries Strawberry Honey Bunches of Oats (for sweetness!!) Sprouted Cereal
So Yummy and Filling!
