This week was packed with things each night! From Christmas parties to soccer games to dinner guests, we have had a busy week.
I left the panini maker on the counter all week because I knew it would get put to good use. I made paninis for dinner and breakfasts. Here are two of my favorite combos from the week:
Multigrain bread hummus spinach artichokes brie leftover veggies spicy mustard
And a breakfast sandwich of :
strawberries

After school and a meeting and some outdoor exercise time in the sun (cold sun, but sun) I was ready for a hot and easy dinner. I sampled some black bean soup at Trader Joe’s this weekend and since I liked it, I bought the simple ingredients. I love how they give samples because I usually end up loving what they offer and buying it!
Here were the ingredients for the soup. This is it.

Tonight, after school and a 45 minute elliptical workout, we started the panini making process. We pulled all possible ingredients out of our fridge and set them on the counter. Then we proceeded to go crazy making delicious sandwiches!
This was a his and hers type meal.
Hers:
Ezekiel Bread – 7 grain spray butter for the sides avocado tomato arugula zucchini fat free swiss cheese hot pepper relish spinach spicy mustard tiny dab of miracle whip salt and pepper

By TheHealthyHostess, on April 2nd, 2009 I was not in the mood to run today, despite both of my efforts to go. My legs felt like 234983498 pounds each, so I didn’t work out. Instead, I made us paninis for dinner.
Mine was a combo of
fresh basil pest (homemade and oil free) fat free feta pear tomato sprouted wheat bread
Bradys included:
chicken pear guac cheddar tomatoes whole wheat bread
Both were amazing as usual! I could eat these everyday!!

This weekend was full of painting and paninis! Yesterday, we woke up and got started on the painting we had planned to do.
