Emily and I tested a few recipes from Hungry Girl’s 200 Under 200 Cookbook. While I feel that many of the recipes have too many processed foods and ingredients, there are many that seem great!
Recipe # 1: Faux Fried Mozz Sticks
Emily went through the cookbook and picked out the recipes we tried yesterday. She is a big mozzarella stick fan!
I am not going post the exact recipe but I will list the ingredients:

Chait introduced me to this amazing salad this weekend. I am obsessed!
So Simple, So Delicious
1 cucumber 3 or 4 peppers red and yellow 1 red onion 5 large tomatoes 1 tbsp. olive oil juice of 1 or 2 lemons tons of salt and pepper – as Chait says, “more than you think is enough” Dice everything into little small pieces. Right before serving, season with lemon juice, olive oil and salt and pepper ENJOY!!

For dinner, on my own, last night I threw some things in the crockpot before school. My recipe was modeled off a recipe my friend Meg emailed me and a Robin Miller Quick Fix Meal. I skipped the chicken this time because it was just me. I will make this again for Brady and add chicken because it was a great filling meal!
