Turkey Meatballs
1/2 c. dehydrated onion, with 1/3 c. water to rehydrate them 2 garlic cloves, minced 1 large egg 1/3 cup dried bread crumbs 3 tablespoons ketchup 1/4 cup chopped fresh Italian parsley leaves 1/4 cup grated Parmesan 1 teaspoon salt 1/4 teaspoon ground black pepper 1 lb. lean ground turkey Add the onion, garlic, egg, bread crumbs, ketchup, parsley, Parmesan, salt and pepper to a large bowl and blend. Mix in the turkey. Shape the turkey mixture

Tonight Katie and Kurt came over for dinner. Katie is recovering from ACL surgery is hobbling around with a huge brace and crutches. She is doing pretty well – minus the stairs Katie and Kurt are both big athletes – Kurt is the head football coach at a highschool and Katie is a volleyball coach. Kurt had ACL surgery

Dinner tonight was amazing! We made two Italian meals of similar things. Mine consisted of:
Semi-Homemade Veggie Loaded Tomato Sauce:
1/2 jar of organic Italian Herb Sauce 1c.mushrooms 1/2 c. broccoli leftover grilled zucchini and onions from Sunday dinner 4 fresh basil leaves chopped up 1 tbsp. minced garlic 1 tsp.Italian seasonin salt and pepper
In the process of cooking
I added this veggie/tomato mixture to 1/2 a spaghetti squash and added parm!
