<div><strong>Marshmallow Fluff Fruit Dip:</strong></div>

<li>Then, using a rubber spatula or a large spoon, fold in the Cool Whip.</li>
<li>Serve with your favorite fruit.</li>

<p>It may not be low in sugar but it was delicious!  I even ended up dipping a few crackers in it&#8230;:)</p>

			<content:encoded><![CDATA[<p>This weekend we had company for breakfast both Saturday and Sunday. Saturday morning our good friend from college came over for breakfast. It was great to catch up! We hadn&#8217;t seen each other since she got engaged and I got pregnant.</p>
<p>I clearly did not dress up for the occasion &#8211; but I did go workout after breakfast, so I had an excuse!</p>

<p>I decided to do something crazy for breakfast and whipped up a veggie frittata and Brady made a turkey bacon (from Honeysuckle, Thanks!) and egg scramble.</p>

<p>The frittata included:</p>
<ul>
<li>egg whites</li>
<li>mushrooms</li>

<li>low fat cottage cheese</li>
<li>feta</li>

<p>Our second breakfast party of the weekend included my cousin Emily and Bill. I took a cute picture of them, but it didn&#8217;t come up on my camera. Bummer!</p>
<p>Anyways, we had a good time chatting with them over french toast, fruit and hash browns.</p>

<p>I also made a more healthy french toast but didn&#8217;t take a picture of it. It included egg whites, flax, vanilla and organic milk on 100% wheat bread.</p>
<p>Both breakfasts were great because it was so nice to catch up! Can&#8217;t wait for the two day work week ahead then lots of time with family and good food!</p>

			<content:encoded><![CDATA[<p>I got my snow day!!  I debated on whether or not to workout at home or at the gym.  I decided to head to the gym for a 9:00am spinning because we are supposed to get more snow tonight and I may not want to venture tomorrow if there is no school!  After spinning, I stopped a Trader Joe&#8217;s to pick up a few essentials and I found some <strong>whole wheat Naan, Trader Joe&#8217;s brand!!</strong> I am really enjoying experimenting with the Indian food- so far our favorite is the Madres Lentils (sp?)  I then stopped at the regular grocery store to pick some things TJ&#8217;s doesn&#8217;t carry, like kale and my favorite face lotion.  Then I came home and made some protein oatmeal bars for us and Brady&#8217;s brother!  I just kind of threw things together and gave it a whirl.  Overall, they turned out great!!</p>
<p><strong>Oatmeal Protein Bars</strong></p>
<ul>
<li>1 1/2 c. oats</li>
<li>1/4 c. wheat bran</li>
<li>1/4 c. ground flax</li>
<li>1/2 c. Bob&#8217;s Red Mill Museli</li>
<li>1/3 c. Natrually More  PB</li>
<li>1/2 c. applesauce (unsweetened)</li>
<li>1/4 c. light vanilla soy milk</li>
<li>1 tbsp. vanilla</li>
<li>1/2 c. dried berry mix</li>
</ul>
<p>Mix all together and bake at 350 for 20 min.</p>

<p>To start, we made dried apples, oranges, kiwis, and bananas.  Brady also tried putting in some fillet, but we cooked it too long!  Then we made fruit roll up with 1 bag of berry medley from TJ&#8217;s.  Here is the overview&#8230;</p>

			<content:encoded><![CDATA[<p>This morning we all woke up early and decided to go run/walking.  We headed to a park near my parents.  Brady and I ran the 1.5 miles to the park and met everyone else there.  The 8 of us took off walking the 3.6 mile loop through the metroparks.  It was a great walk to wake me up and get rid of my wine head.  <img src='http://thehealthyhostess.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>When we got home, it was close to 11 am.  My mom made brunch which was wonderful!  We ate outside on the patio.</p>

			<content:encoded><![CDATA[<p>It&#8217;s game day!  In Columbus, Ohio that means the world is stopping from noon until the last touchdown is scored by our Ohio State Buckeyes.  It is the first game of the season and it is beautiful outside.  We are heading to campus to watch the game with thousands of other excited fans.  In preparation for what lies ahead, I decided we needed a filling and healthy breakfast.</p>
<p>We decided French toast sounded good and so I got to work making it my own way.</p>
<p><strong>Fit French Toast</strong></p>
<p>This made 8 pieces of toast, John and Ash were here with us!</p>
<ul>
<li>6 egg whites</li>
<li>1 tsp. cinnamon</li>
<li>1 T vanilla</li>
<li>1 scoop vanilla protein powder</li>
<li>1 tsp. Splenda</li>
</ul>
<p>Mix all of the wet ingredients together and dip TJ&#8217;s Sprouted Wheat bread in the mix.  Cook in a fry pan, coated with Pam.</p>
<p>Once the toast was done, I went to the fridge to get the syrup and realized we were out!  Bummer.  So I raided the fridge and took out anything that would make a good topping:  peanut butter, almond butter, spray butter, ff coolwhip, jam, banana, strawberries, and blueberries.</p>
<p>The toppings ended up being really good, but after you have one thing in your mind, it&#8217;s hard to get over it.  Luckily, we managed!</p>

			<content:encoded><![CDATA[<p>The fruit that is!  Under a huge bowl of fruit there is some crunchy, fiberific cereal.  I started my bowl this morning with 1c. of TJ Fiber Twigs and then added 1/2 Kashi Go Lean.  I woke up in the night with a HUGE charlie-horse in my calf (maybe from the new workout class) but I think I am dehydrated.  It&#8217;s hard to drink so much water all day when you can&#8217;t leave your class, so I cut way back on water.  I need to figure out a new way of getting it in after school.  Anyways, I knew I also needed some potassium to make sure the cramp would not come back so I added a banana to my cereal and then some peaches and then strawberries and of course blueberries!</p>

			<content:encoded><![CDATA[<p>I love having dinner parties, especially in the summer when we can eat on the deck and enjoy the fresh air!  There are a few obstacles to having an outdoor dinner party and the biggest one is: BUGS!!  They like to eat your guests and land on the food.  In an effort to lessen that problem, we set out the food on the dining room table and loaded up on OFF.  It seemed to work pretty well.</p>
<p>Our company from last night included three of my friends from school and their husbands.  We began to mentally prepare for school over Sangria and fresh guacamole.  <img src='http://thehealthyhostess.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>On to the menu:  It was an easy meal to prepare with guests here because there are a lot of things I did ahead of time!</p>
<p><strong>Warm Almond Crusted Goat Cheese and Berry Salad</strong></p>

<p>Berry Salad:</p>
<ul>
<li>1/2c. wheat berries</li>
<li>1/2 strawberries</li>
<li>1 nectarine grilled</li>
<li>romaine lettuce</li>
<li>sliced almonds</li>
<li>TJ&#8217;s raspberry dressing</li>
</ul>
<p>Warm Almond Crusted Goat Cheese:</p>
<ul>
<li>8 pieces of goat cheese &#8211; 1/2in. thick slice</li>
<li>1 egg + 1 tbsp. water</li>
<li>1/2 c. flour</li>
<li>crushed almonds and breadcrumbs</li>
</ul>
<p>Roll the slice of goat cheese in flour and then the egg+water mixture.  Then roll it in either almonds or breadcrumbs and place in a glass baking dish.  Before serving, place in the oven at 350 for about 10 min, so the inside warms.  Place the goat cheese on the salad and serve!</p>

<p><strong>Mojo Pork Tenderloin</strong></p>

<p>Mojo Pork Tenderloin</p>
<ul>
<li>3 c. orange juice</li>
<li>1 c. lime juice</li>
<li>1/2 c. fresh cilantro</li>
<li>salt and pepper</li>
<li>3 T. fresh chopped garlic</li>
<li>1 T. chopped oregano</li>
</ul>
<p>Rub the pork with garlic and salt and pepper.  Marinate the pork for at least a few hours.  I marinated it for almost 24 hours because I wanted it to be very tender.  I made sure Brady continued to add marinade to the pork while it was on the grill.  When it was done, we sliced oranges and limes and squeezed the juice on the pork.  It turned out very tender and flavorful!</p>
