Kale and Black Eyed Peas

Today was much shorter than yesterday – thank goodness! I did the 6am spin class and then came home for a quick shower and oatmeal in the car on the way to school.

After school I stopped at the post office to drop off some special packages and then came home to make dinner. I decided to try a new recipe from one of my favorite cookbooks: Lowfat Favorites from Moosewood.

The recipe was for black eyed peas and greens.

Progresso Souped Up

Was today 2 days long? It seems like the weekend was forever ago. My week started this morning with 50 minutes of cardio at the gym starting at 5:30AM. I came home and showered and headed to school. His and Hers Lasagna Take 3

Asian Flair Dinner

For dinner last night, Jen, Duke and baby Hadley and Jamie and Josh came over! Since it was a last minute invitation and plan we kept things simple. We used to get together every month for gourmet club, but we hadn’t seen each other all together since Jen and Duke moved and we inhaled Papa John’s together. I was so happy to chat and catch up! We will have to do it again soon!

Meal Planning for Jan. 3 – Jan. 8

One of the things I am going to do better this year is meal planning. I started with this week. I went through my pantry and made a plan for the week before we went to the store. This helped cut down on buying lots of random things that have potential to go bad before we get to eat them. Here is the plan for the week.

Catch up time!

It’s panini time!  Last night after we got home from Brady’s soccer game we made paninis!  Mine (pictured) included brie, sweet peppers and arugula.  Brady’s (not pictured) included tuna, carribean jerk sauce, brie, peppers and arugula.  Both were creamy, crunchy and yummy!  We made them on fresh whole grain bread!
