The weekend again went way too fast. It started with bowling on Thursday night and continued with a night in on Friday, a busy but relaxing day Saturday that included couch shopping and Chipotle followed by more shopping Sunday.
Now we are already at Monday morning with no couch and no weekend left. Bummer.

It’s been pouring all day. Not the best weather to get you in the Christmas spirit.
It doesn’t stop me from thinking about what I need to make and buy for friends and family. It was hard to believe myself when I announced we only had 1 more Wed. spinning class before Christmas.

Last night’s dinner party was a great time! There were lots of laughs, a great appetizer and salad, some delicious dessert and some overcooked Mexican food (made by me).
Adam + Kara’s Appetizer: Refried Bean Dip. I get the recipe from Adam – it was a great starter.
Melissa’s Salad with tons of crunch and fall flavor.

Brady was home for Veteran’s Day yesterday so we got to relax, do leaves, play with Anna, go for a run and do some errands together. It was such a nice middle-of-the-week change! I also got to go to a lunch at my friend Tamara’s house with Anna. She was having her playgroup from her baby music class over and invited us to join them!

For Cindy’s birthday today we went to her house for Thai take out. It was amazing! To top it off, we made a birthday treat.
Peanut Butter Ice Cream Pie. It was so good! I could have eaten the whole pie! For a get together or a party – make this. It is so much easier than your guests will think and it tastes as good as it looks! This is a recipe I adapted from Cooking Light.

Why would I ever make another cookie? These are the best treat I have in….as long as I can remember. They are soft and crunchy, sweet and slightly salty, nutty and fresh and overall delicious! If you have a dehydrator, make these now. I am not sure how they compare to the Queen of Macaroons, but I know they are amazing!
