The other part of our dinner from last night was chicken curry. This dish cooked on my stove for about an hour so it had the same effect as being in the slow cooker. The chicken fell apart the same way too. I somehow missed the picture of the new ancient grains mix that I served with the Indian dishes but it will be making other appearances so I will have time to show you it.

Still pregnant. I just wanted to get that out there.
Today was a nice day in Columbus. The sun was shining and it warmed up by the middle of the day. I walked this morning with Ticia and then went to the doctor. Two more days until I will be induced. Then I ran to Whole Foods to get Brady some chicken curry from the hot bar to go with dinner.

I am finally getting over the pain that I feel when I walk down the stairs. Nothing else was really that sore, but for some reason my quads were super sore when I walked down the stairs all day yesterday. I guess not running for a week and then running 13 miles will do that do you. I am planning on posting the race recap very soon! Sorry for the wait.

For dinner on Thursday I decided to throw together something we never usually have – curry. It was a decision made last weekend when I was cleaning out the pantry and found some random ingredients I wanted to use. The final result was super fast, easy and healthy.
Coconut Curry Concoction
2 packages of frozen stir fry veggies 1/2 can of light coconut milk 2 tbsp. red curry paste large sprinkle of curry powder salt and pepper Mix 2 bags
