For a party we went to this weekend we brought this simple and fresh appetizer. It was easy to make and tasted great on a hot day because it was light and cool!
This recipe was modeled after one my father-in-law makes often: Cucumber Sandwiches.
Roasted Red Pepper Cucumber Bites
1 loaf of small square pumpernickel bread (often found near prepared foods section or deli-not bread isle) 1 large or 2 medium cucumbers 1 jar roasted red peppers 1 block

Chait introduced me to this amazing salad this weekend. I am obsessed!
So Simple, So Delicious
1 cucumber 3 or 4 peppers red and yellow 1 red onion 5 large tomatoes 1 tbsp. olive oil juice of 1 or 2 lemons tons of salt and pepper – as Chait says, “more than you think is enough” Dice everything into little small pieces. Right before serving, season with lemon juice, olive oil and salt and pepper ENJOY!!

I adapted this recipe from 101 Cookbooks and it turned out great!!
Ingredients:
1 block extra firm tofu 6 small cucumbers, or 3 big cucumbers 1 tsp. olive oil 2 tbsp. lemon juice salt and pepper garlic salt feta cheese
Here is the step by step:
1. Cut your block of tofu into small cubes.
2. Spray a pan with foil and sprinkle tofu with salt, pepper, and garlic salt.

Cucumber/Tomato Salad
1 cucumber cut into small pieces 2 tomatoes cut into small pieces 1/3 c. crumbled reduced fat feta cheese sprinkle of balsamic dressing – I use Good Seasons Italian but reduce the oil and use balsamic instead of apple cider vinegar
Today I packed it again for lunch with added jicama! Yum
