It’s been pouring all day. Not the best weather to get you in the Christmas spirit.
It doesn’t stop me from thinking about what I need to make and buy for friends and family. It was hard to believe myself when I announced we only had 1 more Wed. spinning class before Christmas.

Last night’s dinner party was a great time! There were lots of laughs, a great appetizer and salad, some delicious dessert and some overcooked Mexican food (made by me).
Adam + Kara’s Appetizer: Refried Bean Dip. I get the recipe from Adam – it was a great starter.
Melissa’s Salad with tons of crunch and fall flavor.
My overcooked healthy enchiladas that should have been better than they were.
Slow cooker garlic-jalepeno black beans with brown rice.

Yesterday afternoon it was in the 60s outside so we had a play date with Jasper. Lots went on during the 45 minutes we were outside.
Jasper taught Anna all about playing with sidewalk chalk.
And all about eating it.
Then they hugged it out.
Love chalk.
Jasper also showed Anna how to use his slide.
And then he helped her try it.
So happy spring is here!!

Chocolate Covered Popcorn is the perfect holiday treat! It’s healthier than lots of treats, pretty and packages well, besides – it tastes great!
This super simple gift only takes main three ingredients:
Air popped popcorn Dark Chocolate or Chocolate Almond Bark White Chocolate or White Almond Bark Sea salt Pop 10-12 cups of popcorn with an air popper (or use butterless microwave popcorn) Melt 4 blocks of chocolate in the microwave Place the popcorn on a cookie sheet

Thank goodness/Too bad Ashley made these delicious desserts because they kept us full all weekend. It was great because they were low-fat and healthy, but it was bad because we ate them ALL weekend! How were we supposed to resist though!?
Ashley’s Amazing Chocolate-Chocolate Chip Cupcakes (a variation of WW recipe)
1 box of chocolate cake mix 1 can pumpkin 1c. chocolate chips
Mix all together and bake as directed. Enjoy in every way possible!
