<p>2. Instead of our typical breakfast I made a treat! <a href="http://www.icantbelieveitsnotbutter.com/home.aspx">I Can&#8217;t Believe It&#8217;s Not Butter</a> recently sent me a great new frying pan, a gift certificate and a coupon for a free product to try and use in making brunch. When trying to think about what to make, I immediately thought about <a href="http://www.peasandthankyou.com">Mama Pea&#8217;s cinnamon buns!</a> They are the perfect brunch treat to go along with the usual eggs and toast. Since I am a huge fan of <a href="http://www.icantbelieveitsnotbutter.com/home.aspx">spray butter</a>, I knew it would fit in my cinnamon rolls and on our toast! My cousin Emily and her bf Bill joined us in eating!  These were not quite like the ones you would find in<a href="http://www.magsdirect.com/cookingwithpauladeen.html"> this magazine!</a></p>
<p><strong>Apple Pie Cinnamon Rolls</strong></p>
<p>Dough:</p>
<ul>
<li>1 cup almond milk, warmed</li>
<li>1 packet yeast</li>
<li>1/4 c. unsweetened applesauce</li>
<li>2 c. whole wheat pastry flour</li>
<li>1/2 c. unbleached all purpose flour</li>
<li>1 T. baking powder</li>
<li>1/4 c. turbinado sugar</li>
<li>1/2 tsp. cinnamon</li>
<li>1/4 t. salt</li>
</ul>
<p>Filling:</p>
<ul>
<li>1/2 c. brown sugar</li>
<li>1 T. cinnamon</li>
<li>2 T. I Can&#8217;t Believe It&#8217;s Not Butter, spray or softened</li>
<li>2, peeled, chopped apples</li>
</ul>
<p>Icing:</p>
<ul>
<li>1 c. powdered sugar</li>
<li>3 T. water or almond milk</li>
<li>splash of vanilla extract</li>
<li>pinch of salt</li>
</ul>
<p><em>**I am posting Mama Pea&#8217;s directions because I did not follow them very closely and ended up letting my yeast sit for too long. My cinnamon rolls didn&#8217;t rise like hers did so I think you should do it her way. I will take my own advice and try harder to follow her directions next time (soon!)!</em></p>
<p>Dissolve yeast in warm almond milk. Set aside. Combine whole wheat flour, spices, baking powder and salt. In a separate bowl, combine filling ingredients minus the apple and set aside.</p>
<p>After yeast and milk is foamy (about 5-8 minutes or so), stir in applesauce. Add wet ingredients to dry and stir until a dough forms. Turn dough out onto floured bread board and knead for a minute or so (about 20 times). Knead in as much extra flour (~1/4 c.) as necessary so that dough is no longer sticky.</p>
<p>Roll out the dough and cover with filling and apples.</p>

<p>Roll dough up firmly to make a log. Cut the log into eight equal pieces and place in a loaf pan sprayed with cooking spray.Either cover rolls and place in the refrigerator overnight, or if planning to bake immediately, let dough rise in a warm place for at least 40 minutes.</p>

<p>Preheat oven to 350 degrees. Bake rolls for 23 minutes.</p>
<p>Combine icing ingredients in a small bowl. Drizzle with icing.</p>

<p>They were delicious but they would have been much better if I would have done what I was supposed to!</p>

<dl>
<dt><b><i>Ingredients:</i></b></dt>
<dd>6 eggs</dd>
<dd>8 egg whites</dd>
<dd>1/2 cup skim milk</dd>
<dd>8 ounces 0% greek yogurt</dd>
<dd>1 cup sliced mushrooms</dd>
<dd>1 cup spinach</dd>
<dd>1 teaspoon fresh herbs (basil, thyme, parsley, or your favorite)</dd>
<dd>1 cup shredded 2 % cheese or Cabot light</dd>
</dl>
<ol>
<li>Spray your pie plate with cooking spray.</li>
<li>Mix together eggs and milk, yogurt, mushrooms, spinach and herbs. (you could have cooked the veggies if you&#8217;d like)</li>
<li>Sprinkle 1/2 c. cheese onto pie plate and mix in the rest.</li>
<li>Pour mixture into into 9-inch pie plate.</li>
<li>Cover with foil, refrigerate overnight.</li>
<li>Bake in oven at 325 degrees for 30 to 40 minutes until hot and cheese is melted. Let stand 10 minutes before slicing.</li>

<p>I clearly did not dress up for the occasion &#8211; but I did go workout after breakfast, so I had an excuse!</p>

<p>I decided to do something crazy for breakfast and whipped up a veggie frittata and Brady made a turkey bacon (from Honeysuckle, Thanks!) and egg scramble.</p>

<p>Our second breakfast party of the weekend included my cousin Emily and Bill. I took a cute picture of them, but it didn&#8217;t come up on my camera. Bummer!</p>
<p>Anyways, we had a good time chatting with them over french toast, fruit and hash browns.</p>

<p>I also made a more healthy french toast but didn&#8217;t take a picture of it. It included egg whites, flax, vanilla and organic milk on 100% wheat bread.</p>
<p>Both breakfasts were great because it was so nice to catch up! Can&#8217;t wait for the two day work week ahead then lots of time with family and good food!</p>
