Flavors of Summer

Yesterday was beautiful in Columbus! Cool and breezy but totally sunny. Katie and I ran 6ish miles after school and Brady hit golf balls after work. When we were done with our daily physical activity we were ready for some fresh, quick dinner!

This quick and easy meal was thrown together in a few minutes and covered all of the food groups.

For dinner we had a variety of Mexican salad toppings.  Sorry the pictures are not too pretty!  It tasted good though, and was very filling!

Grilled chicken cooked with salsa and cumin.  Slightly spicy with lots of flavor.

Lettuce Wraps

Thank goodness for electricity! Katie, Sarah and I walked 4 miles before making dinner.  I had tons of fresh veggies that I was excited to use so lettuce wraps were a perfect dinner choice.  The pictures are not very pretty, but the dinner was great!

1 onion chopped/sliced 1 c. mushrooms chopped 2 c. zucchini chopped in a food processor 1 tbs. garlic (minced) 1 tsp. fresh ginger 1 tbs. szechaun seasoning 1 tbs. Asian Zing (BW3) seasoning
