			<content:encoded><![CDATA[<p>It&#8217;s amazing how you can take a 5 day break and feel like you never left when you get back to school! My kids were pretty good, they were just tired from lack of sleep and too much tv and junk food over break! I am not so sure they were reading each day like I asked them <img src='http://thehealthyhostess.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>After school, I came home and changed my clothes to go on a run/walk with Katie. We did 3 miles in the freezing cold! We both figured it was better than nothing. Then I stopped at the store to grab a few things for the rest of the week.</p>
<p>I came home to make an easy and quick dinner of Indian food while Brady was at Verizon getting his new phone &#8211; the Droid. It is pretty sweet! I am excited to play with it.</p>
<p>When he got home, around 7:45, I was lucky to have not eaten my arm off. We sat down to a his and her meal.</p>
<p><strong>Hers:</strong></p>
<p>I had lentils with spinach spicy sauce and some Tandoori sauce mixed in, plus extra spinach. All of this served with brown rice and broccoli.</p>

<p>I could only eat about half of the lentil spinach mixture. I think my eyes were much bigger than my stomach tonight.</p>

<p>Brady had the same thing minus the extra spinach and with chicken instead of lentils.</p>

<p><strong>Tomato Lentil Sauce</strong></p>
<ul>
<li><strong><span style="font-weight:normal;">2 can crushed tomatoes</span></strong></li>
<li><strong><span style="font-weight:normal;">1 c. lentils</span></strong></li>
<li><strong><span style="font-weight:normal;">handful of sliced basil</span></strong></li>
<li><strong><span style="font-weight:normal;">1 c. water</span></strong></li>
<li><strong><span style="font-weight:normal;">salt and pepper</span></strong></li>
<li><strong><span style="font-weight:normal;">garlic powder</span></strong></li>
</ul>
<ol>
<li><strong><span style="font-weight:normal;">Mix all ingredients together and simmer until as thick as desired.</span></strong></li>
</ol>
<p><strong>Assemble the rest of the wraps:</strong></p>
<ol>
<li><strong><span style="font-weight:normal;">Steam broccoli</span></strong></li>
<li><strong><span style="font-weight:normal;">Open can of corn</span></strong></li>
<li><strong><span style="font-weight:normal;">Cook brown rice as directed &#8211; I use boil in a bag because it&#8217;s quick and easy</span></strong></li>
<li><strong><span style="font-weight:normal;">Cook zucchini with a little seasoning until browned</span></strong></li>
<li><span style="font-weight:normal;">Wrap all veggies with sauce and feta in a whole wheat wrap. </span></li>
<li><span style="font-weight:normal;"><strong>Dig in!!</strong></span></li>
</ol>
<p>I went back for seconds on the fillings! So excited for leftover in my lunch!</p>

<li>1/2 teaspoon ground cumin</li>
<li>4 teaspoons low-sodium soy sauce</li>
<li>1 tablespoon brown sugar</li>
<li>1/2 teaspoon salt, divided</li>
<li>3/4 (14-ounce) can light coconut milk</li>
<li>4 (6-ounce) tilapia fillets</li>
<li>Cooking spray</li>
<li>3 cups hot cooked brown rice</li>
<li>2 cups of cooked green lentils</li>
</ul>

<h2>Preparation</h2>
<p>Preheat broiler.</p>
<p>Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add ginger and garlic; cook 1 minute. Add pepper and onions; cook 1 minute. Stir in curry powder, and cumin; cook 1 minute. Add soy sauce, sugar, 1/4 teaspoon salt, and coconut milk; bring to a simmer (do not boil). Remove from heat.</p>
<p>Brush fish with 1/2 teaspoon oil; sprinkle with 1/4 teaspoon salt. Place fish on a baking sheet coated with cooking spray. Broil 7 minutes or until fish flakes easily when tested with a fork. Serve fish with sauce, rice, and lime wedges.</p>

			<content:encoded><![CDATA[<p>Since I am considering today my first real day of summer vacation, I slept in! I was awaken to my phone ringing around 8am and thought it was afternoon. It felt great!</p>
<p>After some iced coffee and things around the house, I went to the gym. There, I did 35 min. on the stairs followed up some upper body and ab work. I feel like I haven&#8217;t been there in forever because it has been so nice out, I can&#8217;t pass up a run outside! Today was rainy and super humid so it was a good gym day.</p>
<p>I stopped at Trader Joe&#8217;s on the way home to get a few essentials &#8211; AB, sprouts, ff feta and mango chunks for green smoothies! When I got home I was starving and ready for my new favorite lunch:</p>
<p>Flat out <a href="http://www.lovinmytummy.com">(crack wraps)</a> stuffed with sprouts and veggies.</p>
<p>&#8220;Crack Wraps&#8221; are a term given to a sandwich that becomes addicting. The term was first used by the beautiful mom <a href="http://www.lovinmytummy.com">Sarah</a> This sandwich consisted of :</p>

<li>Sabra hummus</li>

<p>Then, I did more errands by bike and Brady&#8217;s sister, Janelle, came over for dinner.</p>
<p>We had seen a sign at the Arts Festival yesterday for broccoli burgers and were dying to try them, but we weren&#8217;t hungry then, so we decided to make them for dinner.</p>
<p><strong>Broccoli Burgers</strong></p>
<ul>
<li><strong>1<span style="font-weight:normal;">-2 c. steamed broccoli</span></strong></li>
<li><strong><span style="font-weight:normal;">1 c. brown rice, cooked</span></strong></li>
<li><strong><span style="font-weight:normal;">1 onion, chopped</span></strong></li>
<li><strong><span style="font-weight:normal;">2 pieces sprouted grain bread</span></strong></li>
<li><strong><span style="font-weight:normal;">salt and pepper</span></strong></li>
<li><strong><span style="font-weight:normal;">1/3 c. egg whites</span></strong></li>
<li><strong><span style="font-weight:normal;">2 tbsp. hummus</span></strong></li>
</ul>
<ol>
<li><strong>Cook broccoli and rice as directed</strong></li>
<li><strong>Mix all ingredients together in a food processor</strong></li>
<li><strong>Use mixture to make patties</strong></li>
<li><strong>Spray a pan with cooking spray and cook the patties</strong></li>
<li><strong>Serve on a sprouted bun or bread or over salad</strong></li>
</ol>

<p>The verdict: We loved them! They tasted great. Not too much of anything but good veggie flavor!</p>

<p><strong>Lettuce Wraps</strong></p>
<ul>
<li>1 onion chopped/sliced</li>
<li>1 c. mushrooms chopped</li>
<li>2 c. zucchini chopped in a food processor</li>
<li>1 tbs. garlic (minced)</li>
<li>1 tsp. fresh ginger</li>
<li>1 tbs. szechaun seasoning</li>
<li>1 tbs. Asian Zing (BW3) seasoning</li>
<li>some hoisin, soy and teryiaki splashes <img src='http://thehealthyhostess.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </li>
<li>Chicken, shrimp or lean ground turkey</li>
</ul>
<p>Cook the veggies and seasoning together until they are tender.   While this is cooking, cook the chicken with similar seasonings.  I usually use extra lean ground turkey, but shrimp would also work!  When the meat and veggies are done, serve them with fresh lettuce cups!  Brown rice is the perfect side for these because it goes well in the wrap as well!</p>
