It’s amazing how you can take a 5 day break and feel like you never left when you get back to school! My kids were pretty good, they were just tired from lack of sleep and too much tv and junk food over break! I am not so sure they were reading each day like I asked them

My Eat, Drink and Be Vegan cookbook was the inspiration for this meal. I was going to make the chimichangas but I got to hungry to wait for them. Here is what I did:
Tomato Lentil Sauce
2 can crushed tomatoes 1 c. lentils handful of sliced basil 1 c. water salt and pepper garlic powder Mix all ingredients together and simmer until as thick as desired.
Assemble the rest of the wraps:
Steam broccoli Open can of corn Cook

This dinner was so delicious! I was a little worried because I didn’t want it to be too coconutty or too curry-y, but it wasn’t, it was great! I will be making it for company soon!

Ingredient List for Both Styles:
tilapia – marinated in lime juice and cumin sweet peppers homemade guacamole brown rice tomatoes fat free refried beans lettuce special sauce
His:
cheese flour tortillas
Hers:
collard green leaves
Special Sauce
1/2 c. fat free plain yogurt cumin lime juice hot salsa
*Have each person load up there shell as they wish and enjoy!

Since I am considering today my first real day of summer vacation, I slept in! I was awaken to my phone ringing around 8am and thought it was afternoon. It felt great!

Yesterday was beautiful in Columbus! Cool and breezy but totally sunny. Katie and I ran 6ish miles after school and Brady hit golf balls after work. When we were done with our daily physical activity we were ready for some fresh, quick dinner!
This quick and easy meal was thrown together in a few minutes and covered all of the food groups.
It included:
brown rice broiled asparagus baked tofu – chicken for Brady cucumber/tomato salad
