Homemade Bean Salsa

Here is Katie’s Homemade Bean Salsa recipe (otherwise known as hillbilly cavier)  It is one of my favorites!

1 can of corn (drained)
1 can of black eyed peas (drained)
1 can of Rotel Tomatoes
1 diced green pepper
2-3 diced tomatoes
1/2 diced onion
chopped fresh cilantro
2 1/2 cups (about) Fat Free Italian Dressing
garlic salt (to taste)

Sunday Night Fiesta

Last night we had a fiesta! After an absolutely beautiful Sunday that included:

a workout at the gym on the step mill for 30 min. then the elliptical for 15 minutes with Health magazine
a winning soccer game for Brady at 10 am
a 5 mile walk with a great neighbor/friend/role model mother of twin 3 year olds and [...]

sweet peppers
homemade guacamole
brown rice
tomatoes
fat free refried beans
lettuce
special sauce

flour tortillas

Hers:

collard green leaves

Special Sauce

1/2 c. fat free plain yogurt
cumin
lime juice
hot salsa

Book Club for Baby Addison!

Tonight’s book club was not so much about our past book, The American Wife, and more about celebrating Jody’s baby (who will be here in May!!). We had of the party essentials, including favors, cupcakes and a healthy dinner.

Coconut Infused Brown Fried Rice

This meal makes the top ten list for sure! It was a mix of everything in the cupboard but it came out great! I would gladly make it to share with company or for a quick weeknight meal!

Can't get easier than this!

This morning started with a 6am workout. Both Brady and I made it to the gym. I did a hard 35 min. on the stepmill while he ran. It was great to get it over with because Mondays are always busy and draining.
