This is a perfect salad a hot day when you want something simple and fresh. I made it last night to go with our spicy lemon shrimp and together it made a great meal for a 90* day.
Even our little chef agreed!

After two snow days and a 2 hour delay (today), I am headed back to school in a minute. I love that it is already Thursday! Too bad every week can be like this!

After returning home from our 6 hour drive from Nashville, we unpacked and relaxed. We were both sore from being in the car for so long. I decided to go for a 3 mile jog to get some of the lactic acid out of my legs and hopefully make going down the stairs easier tomorrow.
While I was gone, Brady set to work on dinner. This is what he came up with. It HIT the SPOT!

For dinner we had a variety of Mexican salad toppings. Sorry the pictures are not too pretty! It tasted good though, and was very filling!
Grilled chicken cooked with salsa and cumin. Slightly spicy with lots of flavor.
