For Morgan’s Birthday Party on Saturday I took black bean dip.

It was super easy to make and tasted fresh and filling.

We had a similar version of this as an appetizer at Jekyll’s for our valentine dinner on Monday. It was so amazing that I had to recreate it 2 days later.

This appetizer came together with things I had in the cupboard and fridge and may be on the top of my favorite appetizer list.

It’s easy.

It’s simple to make.

It can be made ahead.

It doesn’t need to be served warm.

It’s moderately healthy.

It’s packed with flavor.

It has all of the qualities of a great appetizer.

And it can be served in mini phyllo cups for added crunch and easy eating.

Holiday Appetizer: Mermaid Purse

Tuesdays always seem like the busiest days for me. After teaching a 9:45 class I run home and get stuff done and eat lunch with Anna. Then I make dinner and do things around the house while she sleeps. When she wakes up, we play and then I am off to a 6pm class. By the time I get home, it’s bed time.
