This appetizer came together with things I had in the cupboard and fridge and may be on the top of my favorite appetizer list.
It’s easy.
It’s simple to make.
It can be made ahead.
It doesn’t need to be served warm.
It’s moderately healthy.
It’s packed with flavor.
It has all of the qualities of a great appetizer.
And it can be served in mini phyllo cups for added crunch and easy eating.

Low-fat Crab Cakes

Tuesdays always seem like the busiest days for me. After teaching a 9:45 class I run home and get stuff done and eat lunch with Anna. Then I make dinner and do things around the house while she sleeps. When she wakes up, we play and then I am off to a 6pm class. By the time I get home, it’s bed time. So this is my nap/get things done time and I need to clean like crazy before Thanksgiving

When Hallie and John came over for dinner Hallie brought a bag full of goodies! She had a cute tubby toy for Anna, a fun fall present for me, a big green salad and these little treats!

For a party we went to this weekend we brought this simple and fresh appetizer. It was easy to make and tasted great on a hot day because it was light and cool!
