Anna’s birthday party last night was so much fun! With 11 little girls and 2 little boys, it was quite the celebration! I will do a whole post on the party but until then here is a great recipe for you to make this week!
It’s light but full of protein. Easy to make but hard to resist. And fresh and flavorful!
This recipe was adapted from a fabulous salad I had at The Sweet Spot in Chautauqua, New York.

If you haven’t tried kale chips., you are missing out. Their crunchy, chewiness is hard to resist and they are one of the most best things you can have to fulfill your salty craving.
Preheat your oven to 450*
Spray a cookie sheet with nonstick cookie spray. Cover the cookie sheet with fresh, cut kale (stems removed). Spray kale with olive oil spray and sprinkle with salt + pepper and nutritional yeast or parmesan cheese. Bake for 10-12 minutes

This dinner is screaming summer time! Too bad our 80 degree heat wave is over. We are back to sunny 60′s and totally ok with it. As long as we don’t get anymore snow, we are good!
I’d like to say that I made the crust from scratch, but I didn’t. Thanks to Heinen’s multigrain pizza dough (in the prepared section, near the store-made soups) I will probably never make my own crust. It’s worth the $1.29 to know

Pancakes have been the number one requested breakfast here this week by the queen of the household.
So, in order to take control of breakfast and Anna’s vegetable consumption, I got out the giant tub of fresh spinach just waiting to be used.

When we got home from vacation on Saturday night, Cindy (my cousin) had dinner ready for us. It was so nice to come home to a fresh, healthy, dinner of veggies and grilled chicken versus the typical after-vacay pizza dinner.
My favorite dish was the sweet and spicy roasted brussels sprouts.

We needed a simple and fresh dinner last night after a busy day of getting back into the real world. This meal came together very quickly and tasted great.
It’s is the perfect way to get in some veggies with tons of flavor. It’s quick to make and can easily be adapted to chicken, shrimp or another type of fish if salmon is not your thing.
Soba and Sesame Salmon
