On Thursday last week we had our dinner group over for an Italian night! We chicken piccata, Kara (and Pioneer Women’s) veggie lasagna, salad, and trifle. It was such a great dinner.
For the appetizer, Melissa brought this delicious tampenade. It would be great on top of chicken or layered on a veggie sandwich. But it was perfect with a warm piece of fresh bread. Thanks Melissa!

We had a similar version of this as an appetizer at Jekyll’s for our valentine dinner on Monday. It was so amazing that I had to recreate it 2 days later.

This appetizer came together with things I had in the cupboard and fridge and may be on the top of my favorite appetizer list.
It’s easy.
It’s simple to make.
It can be made ahead.
It doesn’t need to be served warm.
It’s moderately healthy.
It’s packed with flavor.
It has all of the qualities of a great appetizer.
And it can be served in mini phyllo cups for added crunch and easy eating.

Tuesdays always seem like the busiest days for me. After teaching a 9:45 class I run home and get stuff done and eat lunch with Anna. Then I make dinner and do things around the house while she sleeps. When she wakes up, we play and then I am off to a 6pm class. By the time I get home, it’s bed time. So this is my nap/get things done time and I need to clean like crazy before Thanksgiving
