This morning started with the usual. I had coffee and oatmeal and I made Anna her usual mix (rolled oats cooked with water then mixed in baby yogurt – she LOVES it!). Then we played and read books for a while before starting on dinner. Yes, I usually make dinner around 8-9am. It gives me plenty of time to get it done and Anna likes to help from the backpack.

Summer Dinner

Shots, Shots, Shots, Shots..Everybody

Lentil Salad

Yesterday I made a lentil salad that was fresh and summery. I made up the recipe but got ideas from one I had seen in Eating Well. and from RhodeyGirl’s website.

Here is what I did:

1 small onion, diced 1 small zucchini, diced 2 tbs olive oil 1 cup dry lentils, rinsed 1 cup dry bulgur wheat, rinsed 5 cups water 1 large tomato, diced 1 jar roasted red peppers, diced fresh parm. grated

Pizza Perfection

Yesterday Anna and I started the morning with a 5.4 mile run. It was the perfect temp. and it was not as humid as it has been all summer. We didn’t get going until almost 10 because she was up in the night so we both slept later.

After our run and my shower (along with some playing, eating, diaper changing) we headed to the grocery store to load up for the week! We stuck to our list pretty closely

Chicken and Couscous Salad

It was a stressful day. Anna and I started with a 5 mile run after the rain stopped. Thank goodness I did because I would have gone nuts by the end of the day. Shortly after getting back, I dealt with the air conditioner people. Our air has not been working well all summer and so it needed to get fixed. There was not a choice, but what an expensive little machine! That seemed like it took all day
