Hurry up and make this delicious dish before summer is really over.  In Cleveland, you still have another week or so.  The forecast is looking surprisingly good!

Grilled Zucchini with Roasted Cherry Tomatoes

  • 4 small zucchini, sliced thin (I use my Pampered Chef Simple Slicer)
  • 1 pint of cherry tomatoes
  • 2 Tbsp. olive oil
  • salt + pepper – coarse ground
  • 1/2 cup feta cheese
  • 1/2 cup. Garlic Expressions salad dressing
  1. Slice zucchini into thin slices.  Mix slices with Garlic Expressions dressing and allow to marinate.
  2. Meanwhile, rinse cherry tomatoes and coat with olive oil and salt and pepper.  Lay them out on a cookie sheet. 
  3. Bake tomatoes for 15-20 minutes at 400 until tomatoes are about to burst.
  4. While tomatoes cook, grill zucchini in a grill basket until it’s cooked through.  
  5. Mix hot tomatoes with zucchini and feta cheese and serve warm!
  6. So good!
