 For fun this week, we made Gluten Free Chocolate Chip Cookie Snowmen.  The kids loved the giant cookies!  They could have been easily decorated – but we enjoyed them as is.  Next time I make them, I will have pretzels for arms, candy for eyes and nose and mouth, and frosting for a scarf.

I was very impressed with the GF dough because it tasted very similar to regular Pillsbury cookie dough, which we all know is amazing.  The texture was very smooth, almost silky because the base of the dough was rice flour.  The cookies rose perfectly and turned a beautiful shade of golden brown when they were done.

While the ingredient list isn’t too short, these would make a delicious treat for someone who has to avoid gluten! I would also love to make them into ice cream sandwiches!
