Easy Zucchini Ribbon Shrimp “Pasta”

A simple meal low in carbs, easy to prepare and full of fresh veggies.   


I threw this together last week when Anna really wanted noodles for dinner and I was in the mood for something lighter.  I make my zucchini noodles with a spiralizer I got on Amazon. It was a great purchase for $30 and I use it all the time in the summer.  

After spiralizing the zucchini, toss it with a little olive oil and salt + pepper in a hot pan to soften the noodles and season them.  Avoid cooking the noodles for too long because they will get mushy.  


Then top them with some roasted cauliflower, your favorite marinara and large shrimp.  Add a sprinkle of parmesan or nutritional yeast and you are ready to go! 


A fresh dinner, ready before you know it!
