When the seasons change, its fun to change up your salad toppers!  This quick salad came together in a rush before we headed off to have dinner with friends on a Saturday night.  I wanted something a little different and I threw what I had together in a bowl and went with it.  For the dressing, I really only use 3 store bought salad dressings – the rest I make myself.  Making dressing has become the only way to go because it tastes so fresh, not full of gross sugars and easily adaptable to your meal or salad.  But the 3 dressings I like to buy are:

  • Trader Joe’s Champagne Dressing – light and fresh tasting
  • Trader Joe’s Spicy Peanut Dressing – I could drink it from the bottle
  • Garlic Expressions – simple flavors that taste homemade

White Balsamic + Maple Syrup Salad Dressing 

  • 1/2 packet of Good Seasons Italian Dressing Seasoning Packet
  • 1/4 c. olive oil or canola oil
  • 1/3 c. white balsamic vinegar
  • 1/4 c. water
  • 2 Tbsp. maple syrup

Combine ingredients in a jar and shake to combine.

 Serve with Fresh Salad!

Tips:

To take dressings with you, use a Ball or mason jar so the dressing won’t spill in your car or on your food.  

Make sure to keep some ingredients separate until just before serving  – avocado (because it browns), goat cheese and nuts (they lose their crunch with moisture).

Keeping some ingredients separate also allows those with allergies to have some salad it’s all mixed.
