Apple Cinnamon Quinoa
  • 1 c. rinsed and drained

  • 1 c. water + 1 c. almond milk

  • 1 T. vanilla

  • apples – peeled, cored and diced

  • 1/2 teaspoon salt

  • 1T.  ground cinnamon

  • 1/3 cup sliced honey almonds

  • 1/2 c. almond milk

  1. Bring the quinoa, almond milk and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
  2. In a small pot,  add 2 T. water, the apples, and sprinkle with salt, cinnamon, and maple syrup. 
  3. Let simmer until soft – about 2-3 minutes.
  4. Pour in the extra almond milk.
  5. Continue cooking until hot.
  6. Add the apple to the quinoa, and cook together a few minutes before serving.
  7. Sprinkle with honey roasted almonds and more cinnamon.
