With the holidays fast approaching, it’s time to gather that list of quick and easy appetizers that you can whip up whenever you need one!  Here is a great new app to add to the list. 

There aren’t many ingredients and it comes together in a matter of minutes. 

First: 

Chop 5-6 tomatoes into small pieces and put in a bowl.

Add 2-3 tablespoons of pesto (store bought or homemade).

Next: 

Mix to combine.

Then:

Add 1/2 c. of parmesan cheese – either fresh or from a can or a combination of both.  Stir to combine.

Last: 

Slice a french or multigrain baguette into thin slices.  

Place the pieces of bread onto a cookie sheet and bake at 400 for about 5 minutes to allow the bread to toast.  

Remove the bread from the oven and place a large scoop of bruschetta on each toast and set on the cookie sheet.

Bake the bruschetta at 400 for 8-10 minutes or until tomatoes are warmed, cheese starts to melt and flavors meld together. 

Serve!

Easy Bruschetta 

  • 1  fresh french baguette or multigrain baguette, sliced thin
  • 1 T. olive oil
  • 5-6 fresh tomatoes, diced
  • 1/2 c. parmesan cheese
