This Saturday was a perfectly lazy and wonderful fall day. It started with homemade french toast, followed by training a client and working out with her, then a trip with Anna to the store to grab a giant loaf of fresh bread and other fall goodies. We came home and threw together a sub sandwich to enjoy with my parents while watching the Ohio State game. I proceeded to fall asleep for most of the second half while a cool breeze came through the windows. When I woke up, we prepped pizzas to put on the grill with neighbors for dinner. Then we drank pinot noir and played cards until just before midnight.

It was a good day.

With Anna starting preschool this week, good breakfasts will be important. I thought french toast would be a good go-to breakfast for her because it would give her some carbs + protein to stay with her. But I wasn’t sure how much she would enjoy french toast until I made it this weekend. She scarfed every bite – without syrup because we are mean parents and not ready to face the syrup in the hair battles. 🙂

Try it. I made two versions – just for fun.   

And to dirty more dishes.

Skinny French Toast

  • 3/4 c. light vanilla soy or almond milk
  • 1/2 c. egg whites
  • 1/2 T. cinnamon
  • 1 T. vanilla
  • 4-6 Food For Life Ezekiel 4:9 Flax bread or whole grain sprouted bread
  1. Mix milk + egg whites + cinnamon + vanilla until combined.
  2. Soak bread in the mixture until coated.
  3. Cook on med. heat in a greased pan.
  4. Flip/turn when browned on one side.
  5. Drizzle with syrup.
