As I detox myself from the many glasses of wine + champagne, the large-coffees throughout the day, and the abundance of wonderful friends nearby at all times, I am struggling.

I am missing the wine, the coffee, the celebrating and the friends.

Also, I am jealous of John + Ash, who are off to Cabo for the next 8 days.

In an effort to continue their celebration, I had to put my jealousy aside and embrace the flavors of Mexico!

Mahi Mahi with Fresh Tomatoes + Avocado

  • 4 mahi mahi fillets
  • 2 T. olive oil
  • 3 – 4 cloves garlic, minced or pressed
  • 2 T. lime juice
  • 1 T. cumin
  • salt + pepper
  • 1 avocado, diced
  • 3 tomatoes, diced
  • 1/2 c. cilantro, chopped
  • 2 T lime juice
  • 1 T. olive oil
  • salt + pepper
  1. Mix olive oil, garlic, lime juice, cumin, salt + pepper together until combined.
  2. Marinate fish in the mix for at least a few hours, at least, bake at 425 for 18 – 20 minutes.
  3. When fish is done cooking, remove from oven.
  4. In a separate bowl, mix avocado + tomato ingredients until combined.
  5. Place on top of fish and serve.
  6. Enjoy!
