Parmesan Tilapia

(adapted from Prevention RD)

  • 1-2 lb tilapia filets (about 4-8)
  • 1/4 cup (1 oz) Parmesan cheese, shredded
  • 2 Tbsp unsalted butter, softened
  • 2 Tbsp nonfat plain Greek yogurt
  • 2 Tbsp lemon juice
  • 2 clove garlic, minced
  • 1/2 tsp dried Italian seasoning
  • salt and ground black pepper, to taste
Directions:
  1. Pre-heat the oven broiler (500-550 F). Line a baking pan with foil and spray with cooking spray.
  2. In a small bowl, combine all ingredients (except fish). Mix well and set aside.
  3. Arrange tilapia filets in a single layer on baking pan and cover with the mixture.
  4. Broil a few inches from heat for 2 to 3 minutes.
  5. Flip the filets over, add a little more mixture and broil for an additional 2-3 minutes or until brown.
