Simple Summer Slaw

  • 1/4 green cabbage
  • 1/4 red cabbage
  • 5 stalks of celery
  • 1 large cucumber
  • 1 mango or large peach
  • 3 medium tomatoes
  • 1 avocado
  • 1 tbs caraway seeds
  1. Shred cabbage and celery using the “S” blade of a food processor
  2. Peel and finely cut the cucuber
  3. Cut one tomato into 1-inch cubes
  4. Blend the remaining two tomatoes with the avocado, mango, and caraway seeds.
  5. Mix all ingredients together in a bowl and serve.
  6. Optionally, you can add a small amount of mint, cilantro, lime juice, or chives to taste.
