Lentils are high on my list of delicious dinner food. They are super versatile. They take on so many flavors. They are loaded with fiber and with protein. And they are easy to make.

Don’t be afraid of them…Embrace them!

Easy Indian Chana Dal

Ingredients:
• 2 cups Chana Dal (yellow split lentils)
• 4 cups Water
* 1/2 cup black lentils (optional)
• 1 onion, diced
• 1 Garlic clove (minced)
• 2 Onions (chopped)
• 2 tsp. Garam Masala
• 1/2 tsp Cumin
* 1-2 tsp. curry powder
• Salt and pepper to taste
Directions:
  1. In a med. pot, place water and lentils. Bring to a boil then turn down to a simmer. Let lentils simmer for about 20-25 minutes or until they are soft.
  2. When lentils are soft and cooked, drain most of the excess water.
  3. In a separate pan, cook diced onion and garlic with a 1 tsp. olive oil. Add water if needed and cook until onion is soft and translucent.
  4. When lentils are cooked and onion is soft. Combine the two together in a sauce pan.
  5. Add garam masala(Indian flavored spice- so delicious), cumin, and curry.
  6. Stir and simmer together.
  7. Serve over brown rice with some curry roasted cauliflower.

I am off to teach an interval class and then shop for a little while before lunch. Anna needs some new long sleeve shirts and a few things for vacation, she is growing out of her 18month shirts!
