It’s easy to forget the benefits of eating eggs and how simple they are to make and enjoy for dinner. This week I put quiche on the menu since it’s been a while since we had it. Also, because it’s a great way to sneak Anna some veggies! She will gobble down kale, onions, artichokes and mushrooms if they are hidden the pillowy quiche.

I did one version that was packed with veggies. Then, to appease Brady, I made one version with some veggies but also bacon and sausage. A little bacon and sausage can go a long way!

His Quiche

  • 6-8 eggs
  • 3/4 cup sauteed veggies (diced onions, kale, broccoli, spinach – anything really!)
  • 1/2 cup of low fat cottage cheese
  • 1/2 cup of skim milk
  • 1/2 cup of 2% cheddar cheese
  • 2 small round of cooked turkey sausage (or regular) broken up
  • 5 pieces of already cooked bacon (micro bacon works too)
  • sea salt and pepper to taste

Her Quiche

  • 4 eggs
  • 4 egg whites
  • 2 cups of sauteed veggies (diced onions, kale, broccoli, artichoke hearts, anything that you simmered in a little h2o or evoo for a few minutes)
  • 1/2 cup of low fat cottage cheese
  • 1/2 cup of skim milk
  • 1/4 cup of nutritional yeast or 2% cheese
  • 2 T. feta cheese
  • salt and pepper
  1. For both quiches, mix eggs with all ingredients until combined.
  2. Pour egg mixture into a sprayed glass dish and bake at 375 for 35-45 minutes until egg is cooked through. Test by inserting a knife into the quiche.
  3. Serve warm with a fresh salad and some multigrain bread!

This smile is Christmas card worthy, if only she were red. I need to get better at Adobe Lightroom. 🙂
