Isn’t Anna a great little crafter? Can you believe she made this turkey all on her own?

Well, it wasn’t all on her own, but close. She colored this little thankful turkey! And while she colored we talked about things we are thankful for. Now when I ask her what she is thankful for – she quickly responds, Daddy! Lesson learned: be thankful for your daddy!

With Thanksgiving only 2 days away, we needed a light and colorful dinner. Also, we needed a dinner that would be ready when I got home from teaching cycle at 7:45pm. Fish tacos seemed like the perfect meal.

Fresh, full of protein, flavorful, and packed with veggies.

I marinated some wild cod fillets in:

  • 1 tsp. cumin
  • 3 cloves of pressed fresh garlic
  • 2 Tbsp. fresh lime juice
  • 1 tsp. EVOO
  • a sprinkle of sea salt and pepper
  • fresh cilantro

Then I baked the fish for 10-13 minutes at 400*.

It was flakey and tasty.

With it, we had all of the traditional taco toppings.

Lettuce, tomatoes, and spicy corn salsa from Trader Joe’s.

And not pictured: black beans and brown rice and FAGE Greek Yogurt – plain!

This is a great example of the greek tradition of “good living” – combining a positive attitude about life and healthy, fresh food!
