At a family dinner last week, Patty and Andrew made some delicious twice baked potatoes. I had not had them in so long, they were a great! if you need a hearty, filling, warm side dish for your next dinner party – make twice baked potatoes.

You could always do them with sweet potatoes and you can make them as light or as rich as you’d like. They are great because they can be done ahead of time and then heated up when guests are ready to eat.

Classic Twice Baked Potatoes

with a way to lighten

  • 4 large baking potatoes
  • 1 cup sour cream – light sour cream
  • 1/2 cup milk – skim milk
  • 4 tablespoons butter – you can omit or lessen this
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded Cheddar cheese, divided – 2% cheese
  1. Bake potatoes in preheated oven for 1 hour until done.
  2. When potatoes are done allow them to cool for 10 minutes.
  3. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins.
  4. Add sour cream, milk, butter, salt, pepper, and 1/2 cup cheese.
  5. Mix until well blended and creamy.
  6. Spoon the mixture into the potato skins. Sprinkle with cheese.
  7. Bake for another 15 minutes.
