Last night we had an impromptu dinner party! Jen, Duke and Hadley, Tracie, Pat and Jasper, and Micca, Josh, Reese and Ryan came over for burgers and playtime. We had a really simple potluck that tasted great.

My plan was to photograph all of it, but 5 babies + Anna not having a nap yesterday + rain in the middle of it = no food pictures. I did get some good play picts before the rain started. Thanks to Tracie and Pat for bringing over Jasper’s slide.

And a feast of burgers, veggie burgers, salad, vegetable pasta salad, party potatoes, potato cheese soup, grilled veggies, and brownies.

This morning we woke up to gray skies and wet grass. We have postponed our family run until after Anna’s morning nap (which she is currently taking). We decided pancakes would be good for the dreary morning!

Apple Cinnamon Pancakes

  • 2 cups of TJ’s multigrain baking mix
  • 1 cup of skim milk
  • 1 egg
  • 1 egg white
  • 1/2 cup unsweetened applesauce
  • 1 tsp. cinnamon
  • 1 diced apple – microwaved for about 2 minutes in a few T. of water

  1. Mix pancake mix, milk, egg, egg white, applesauce and cinnamon together to make the batter.
  2. Heat a skillet with a little butter in it, add batter mix for form pancakes.
  3. Flip pancakes when batter is bubbly.
  4. Serve pancakes with diced apples and cinnamon and topped with real maple syrup!

Anna loved these pancakes! I saved the leftovers for an easy snack that I could take on the go.  The reminded me of a recipe from Cooking Light magazine!

Our plans today include a family run, some house work (hopefully for a showing), and celebrating Josh’s 30th birthday at the Crew game tonight!
