Here is a fun and super simple recipe for a festive dinner!

Italian Veggie Chicken

  • chicken breast (trimmed and cut into small pieces – I used 5 breasts for Brady and our neighbors)
  • 1 can of diced tomatoes (I used garlic and OO)
  • 3 cups of fresh baby spinach
  • 1 – 2 cups of frozen artichokes (Trader Joe’s ) *canned would also work
  • 1 Tbsp. capers
  • 2 Tbsp. minced garlic
  • 2 Tbsp. EVOO
  • 1/2 c. feta
  1. Cook chicken with 1 T. garlic, 1 T. EVOO and salt and pepper.
  2. In another pan, cook the other T EVOO, garlic, spinach, artichokes, capers, and diced tomatoes (in juice). Simmer together until spinach is wilted.
  3. Mix chicken in with veggies and simmer together (reserve some veggies if you don’t want to mix with chicken).
  4. Mix feta in while the dish is still warm.
  5. Serve on top of pasta!
  6. Enjoy the holidayish colored dish!
