Tamara’s Pea Soup

  • 2 bags of frozen, organic peas
  • 1-2 large onions, diced
  • 2 c. water
  • 4 sprigs of fresh mint
  1. Simmer 2 bags of peas with the diced onion in 2 cups of water for about 10 minutes.
  2. Pulse the peas and onions in a food processor until chunky.
  3. Add fresh mint leaves and continue blending until it reaches your desired consistency.
  4. Chunkier for adults and smoother for babies!
  5. Serve with “crunchy salt” (as Tamara says 🙂 ) and good EVOO.
