Tamara’s Pea Soup
- 2 bags of frozen, organic peas
- 1-2 large onions, diced
- 2 c. water
- 4 sprigs of fresh mint
- Simmer 2 bags of peas with the diced onion in 2 cups of water for about 10 minutes.
- Pulse the peas and onions in a food processor until chunky.
- Add fresh mint leaves and continue blending until it reaches your desired consistency.
- Chunkier for adults and smoother for babies!
- Serve with “crunchy salt” (as Tamara says 🙂 ) and good EVOO.
