Chipotle Steak

For someone who doesn’t eat meat, I sure cook it a lot! It’s hard to cook it for other people though because I don’t know how it tastes. This proved to be a problem with this dinner because I over “tenderized” it. I added quite a bit of meat tenderizer, not really paying attention to the fact that meat tenderizer = salt. So if you make this, don’t overdo it on the tenderizer, it won’t go over as well as you hope it will.

Chipotle steak

  • sirloin steak cut 2 1/2″ thick, figure about 3/4 lb per person.
  • 4 cloves garlic
  • 1 cup loosely packed cilantro
  • 3T chipoltles in adobo(can in mex section)
  • 1T mustard powder
  • 2T coriander
  • 2 T salt
  • 2 T pepper
  • 1/4 c fresh lime juice
  • 1/4 cup olive oil
    1.   pick up meat the night before and don’t freezein the am
    2. sprinkle adolph’s meat tenderizer on both sides of the meat
    3. put all ingredients in a food processor or blender to make paste
    4. about 2 hours before grilling schmeer this paste on both sides:
    5. 8 minutes per side on a REAL hot grill
