For dinner last night I wanted something that would not heat our house up any more than it was. It’s been HOT here in Columbus and our air has not been working as well as it should be. Luckily, they are coming to fix it today!
To make dinner, I took a few pieces of foil and covered them with cooking spray.
Then I added fish(frozen salmon and some frozen tilapia) and zucchini and yellow squash. I also added some seasoning, Asian for the salmon and basil pesto for the tilapia. I also made a few packets of just veggies with an italian marinade.

I wrapped up the packets and Brady grilled them for about 10 minutes on each side. They came out perfect! The fish was tender and full of flavor.

We ate this clean meal with some quinoa! It was perfect after a weekend full of desserts and snacks with every meal!
The plan today is to go to lunch with Hallie and Bethany! I am looking forward to catching up with them before the air conditioner people come this afternoon.
Spotlight Series: Since I am taking a course on health, nutrition and medicine I am going to be spotlighting different vitamins, minerals, foods and supplements. I will fill you in on some of the information I am learning about using these things to help our bodies!

Mm that fish looks so good! I love that there’s no hard mess to clean up afterwards- just toss the foil
Foil packs are so tasty, and not to mention an easy clean-up!
