Semi-Homemade Indian Food

Still pregnant.  I just wanted to get that out there.  :)

Today was a nice day in Columbus.  The sun was shining and it warmed up by the middle of the day.  I walked this morning with Ticia and then went to the doctor.  Two more days until I will be induced.  Then I ran to Whole Foods to get Brady some chicken curry from the hot bar to go with dinner.

I stopped at a little baby boutique looking for a certain type of swaddling cloth (no luck!) then went home to relax on the couch and hang out with Katie.

For dinner we had a small Indian feast.  Gina would be proud.  :)

I made some baked tofu (seasoned with salt and pepper and baked for about 35 min at 425).

Then I made some red curry sauce:

  • 1 can of light coconut milk
  • 2 tbsp. red curry paste
  • 3/4 tsp. crushed red pepper
  • 1/4 tsp. garlic powder

To complete our dinner we had:

  • broccoli
  • Naan
  • leftover quinoa instead of rice
