This weekend was so nice and relaxing.  We spent the day at Brady’s parents yesterday and had a big Easter dinner with his extended family.  It was great, complete with an intense game of football and some delicious spinach balls. 🙂

When we got home last night, we laid down for a minute (at 5pm) before we were going to meet up with friends later to watch the games.  At 9pm we woke up to complete darkness.  I think our bodies were craving sleep in preparation for baby H.  We ended up eating smoothies for “dinner” and watching some b-ball before going back to bed for the night.

All of the sleep made it easy for me to get up for a morning workout today.  I went to the gym at 7 am and did 35 minutes of cardio on the step mill and elliptical before coming home to get ready for church.  We went to church with Brady’s fam at his family church.  It was fun to see all of the little kids in their fancy Easter outfits.

After church, we went to his parents for another delicious meal.  I got some random pictures of the meal but some good ones of dessert.  There were lots of leftovers from yesterday’s traditional meal (ham, potatoes, corn, green beans etc) and then there was salmon and “shower salad” that I brought.  I loaded up my plate with salmon and salad and it was a great lunch!

Dessert was amazing as well.  Brady’s dad whipped this treat up in just a few minutes.

It was:

  • 1 angel food cake – made in a loaf pan and sliced into thin slices
  • fresh strawberries cut up
  • whip cream or cool whip
  • raspberry preserves

All you do is layer your ingredients and serve right away!  It was amazing!

We left a little while after lunch to go home and work on our to-do list that is never ending, but shrinking!  We put Brady’s old car for sale on AutoTrader, cleaned the garage, put some winter clothes up in the attic, did laundry, vacuumed, paid bills and other random odds and ends. I even managed to fall asleep in the sun on the deck for about an hour.  I never take naps so I know I am subconsciously saving up some sleep while I can.  🙂

Then we got to making to dinner.  I didn’t really go to the store last week so my last big grocery shop was over a week and half ago.  I was going to go today, but decided we could hold off until Wed. when I have a doctor’s appt. and could enjoy going.  Dinner tomorrow and Tuesday are going to be pulled together with just about nothing in terms of fresh produce.  I am considering it a challenge.  Stay tuned to see what turns up on our plates. 🙂

For tonight, Brady had about the same thing as me just with jerk marinated chicken instead of tofu.  We both agreed it was a good dinner.

After dinner I had about 30 small handfulls of chocolate chips and we went for a walk. I am not sure if I am ready for my last full week (4 days) of teaching third grade this year!
