Progresso Souped Up

Was today 2 days long? It seems like the weekend was forever ago. My week started this morning with 50 minutes of cardio at the gym starting at 5:30AM. I came home and showered and headed to school. After school I had a meeting and then had to stay until 6 for the board meeting. I am a mentor teacher and we are required to attend two board meetings a year. The board meeting ended around 7pm and I headed home then.

When I walked in the door around 7:15 I was starving to the point of a headache – despite my 3:00pm Clif bar and 4:00pm apple. I wanted something quick and easy so I threw together or menu planned meal.

Souped up Progresso Soup

Brady had a can of chicken noodle soup with some added black beans and corn.


I decided on French Onion soup with added mushrooms and onions.

DSC01256.JPGI simmered an onion that I sliced up and about 5 button mushrooms in some water until they were soft and the water was absorbed. Then I added the soup can and heated it together. It was delicious and filling!


As I ate the soup, I added parm cheese to it. I also had a Flat Out grilled hummus wrap. It was amazing! I will say, I eat these about 3 times a week!




Tomorrow should automatically feel shorter since I won’t be home at 7:15 if everything goes right!

Anyone have an idea for dinner for company on Friday?!

    I love the light Progresso soups. The 0 and 1 point ones are my favs.

    The onion soup looks amazing. Do you have a recipe for “French Onion Soup” – healthy style? I would eat it everynight if it was easy, and low fat! 🙂 xoxo
