I am still catching up on things from before vacation and we are leaving again for the second vacay of the week today. We are headed to Chautauqua for the Fourth of July so I literally dumped our suitcases from our Maryland trip into the washer and then put the put the clothes right back in for this long weekend.   

Anyways, before we left last week I needed to clean out the fridge and I needed to make dinner. The combination of the two activities are how this dish was created. In my fridge I had: a few sweet peppers, an eggplant, some asparagus, one tomato, a little bit of spinach and half of a zucchini. So I cut up all of the veggies and threw them on a cookie sheet in the oven at 400 degrees. The veggies roasted. In the meantime, I made some quinoa. When the veggies were done, I threw it all together on a bed of spinach. Done and Done.

To give Brady some manly meat, I added rotesserie chicken that I bought for him last week. His dinner was not as colorful as mine but it still got the job of cleaning out the fridge done.
