This weekend we headed up to my parents house in Chagrin Falls for some quality family time. They were coming back from Mexico and my papa and aunt and uncle were in town visiting my cousin and her husband (who are having a baby in June).
The projects of the weekend included getting the baby room ready (putting up crown molding, etc) and planning the shower (Sunday, April 19th). It was a productive weekend and included a feast for Saturday

Roasted Asparagus Parmasen Quinoa
Serves 12
2 c. quinoa 4 c. water 1 lb. asparagus 1/3 c. fresh shaved parm 1/2 c. garbonzo beans salt and pepper Wash and cut asparagus. Place on a sprayed baking sheet with cooking spray and salt and pepper. Bake at 400 for 20 min. until golden brown. Make quinoa as directed When asparagus is done and quinoa is done, add pieces of asparagus and parm. to the quinoa. Serve warm
