Sugar Free Diabetic Carrot Cake

  • 1 c. low fat sour cream
  • 1 c. grated carrots
  • 1 small container carrot baby food
  • 1/2 can crushed pineapple
  • 1/2 c. Splenda
  • 1 c. unsweetened coconut
  • 1/2 c. raisins
  • 1 tbsp. raisins
  • 2 eggs
  • 2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. ground oat flour

  • 2 bricks of reduced fat cream cheese
  • 1 c. toasted unsweetened coconut
  • 1/2 c. Splenda

Mix all ingredients for the cake together. Place 1/2 in a sprayed round cake pan and bake. Then place other 1/2 in the pan and bake. Once cake is cooled, frost the top of one cake and place the second cake on top. Frost the entire cake and cover with toasted coconut.
