Snow Day Baking

I got my snow day!! I debated on whether or not to workout at home or at the gym. I decided to head to the gym for a 9:00am spinning because we are supposed to get more snow tonight and I may not want to venture tomorrow if there is no school! After spinning, I stopped a Trader Joe’s to pick up a few essentials and I found some whole wheat Naan, Trader Joe’s brand!! I am really enjoying experimenting with the Indian food- so far our favorite is the Madres Lentils (sp?) I then stopped at the regular grocery store to pick some things TJ’s doesn’t carry, like kale and my favorite face lotion. Then I came home and made some protein oatmeal bars for us and Brady’s brother! I just kind of threw things together and gave it a whirl. Overall, they turned out great!!

Oatmeal Protein Bars

  • 1 1/2 c. oats
  • 1/4 c. wheat bran
  • 1/4 c. ground flax
  • 1/2 c. Bob’s Red Mill Museli
  • 1/3 c. Natrually More PB
  • 1/2 c. applesauce (unsweetened)
  • 1/4 c. light vanilla soy milk
  • 1 tbsp. vanilla
  • 1/2 c. dried berry mix

Mix all together and bake at 350 for 20 min.
