This recipe came together last minute the night before Thanksgiving when my family was looking for something light to go with our salmon dinner.
My mom had the following in the cupboard/freezer so this delicious dish was created!
Tomato Artichoke Chickpeas (not very original I know!)
1 bag TJ’s artichoke hearts (frozen) 1 can chickpeas 1 can diced tomatoes salt and pepper
Stir fry together and enjoy with any main dish or as a filling lunch!!

In an effort to stay healthy throughout the holidays, I made a huge pot of vegetable soup. It’s similar to cabbage soup from the diet except I add lots more things. I made a big pot tonight to take for lunches for this week. Its super filling and warm, also low calorie and FULL of fiber.
* 4 cups of natural chicken broth (Progresso)
* 2 leeks ( white part only)
* 1 can

Today went pretty fast for being a Monday and a Thursday at school. It is soooo nice that tomorrow is the last day of the week! Thank goodness! I am ready for a break.
I worked out this morning so I wouldn’t have to bother with it this afternoon, which is always a good idea in my opinion. When I got home, I made a quick batch of pumpkin cupcakes. They are soo good! I had to try one!
