Today was a beautiful day in Columbus, Ohio! It was in the 80’s, which made recess duty a treat! Sometimes (lots of the time) I can’t stand being inside all day, so I look forward to recess duty.

I left for school and Brady set to work on the rest of our to-do list we did not get to this weekend. I was jealous he had today off for Columbus Day and I had school, he then reminded me of summer. 🙂

After school, we walked to the library and got some books for our upcoming weekend getaway to Tilghman Island, Maryland. Brady got a few good ones and I picked up a cookbook to flip through, but I think I will be busy with finishing my nutrition certification, grad school and reading my book club book.

On to dinner… from the grill…

For dinner we made salmon on the grill with tons of fresh veggies and leftover Black Bean, Bulgar and Corn salad. It was a hit!

My salad included:

  • spring mix greens
  • mushrooms
  • light feta
  • tomatoes
  • peppers (grilled and raw)
  • salmon
  • bean, corn and bulgar salad

I am off to work on grad school!  I hope to make some homemade granola/protein bars, but we will see how much I get done before falling asleep in my books!
