Sorta Good-Sorta Gross

Tonight, after 45 min. on the elliptical while reading Good in Bed, I was in the mood to cook an easy summery dinner. Brady had b-ball after work , so I knew I could wait until 8pm to eat or eat on my own. I decided to eat on my own because I knew I would snack for 3 hours, from 5-8, if I didn’t just eat dinner. I used my new HUGE food processor to make Gazpacho. I don’t remember having it often so I didn’t have many expectations. As I added veggie after veggie to be blended, I was very curious to whether it would be a wonderful low-cal girlfriend dinner, or a nasty veggie milkshake used in a cleansing fast.

Here is what I threw together..

Fresh Vegetable Gazapacho

Blend the following:

  • 2 cucumbers
  • 2 big tomatoes
  • 5 baby carrots
  • 3 celery stalks
  • 1 bell pepper
  • a big splash of lemon juice
  • lots of salt and pepper
  • 1 T. garlic
  • 1/2 can of navy beans (leftover and thrown in to add a little substance)

That’s it! I added some sliced avocado and some spices to it before digging in :) It wasn’t bad, but it wasn’t great. By the end I felt a little nauseous but it may not have been the soups fault. Who knows??! My mom was going to come down today, but is coming tomorrow so I will have her give it a try. Brady already said there is no way he is eating or tasting it….
